hummus

You know those recipes that you make again and again and you could even make them while sleeping?
This recipe is one of those. Most hummus recipes just don't have the right amount of lime or lemon juice, contain not enough tahin, there is no parsley in there or have the wrong texture. So I've started to make a hummus recipe after my taste.



Hummus:

200 g (7 ounces) cooked chickpeas/garbanzo beans
1 tablespoon olive oil
1 tablespoon tahin
2 tablespoons lime or lemon juice
1 or 2 garlic cloves depending on their size and how garlic-y you like it
3 tablespoons chopped fresh parsley
6 tablespoons water (or cooking liquid from chickpeas)
1 teaspoons salt
freshly ground pepper
1/4 teaspoon cumin, 1/4 teaspoon cayenne, 1/4 teaspoon ground coriander (all optional but good)

Chop the garlic and let it swim in olive oil. Put the chickpeas with water and lime/lemon juice into a blender and blend, then add tahin and the olive oil with garlic and blend again. When the desired texture is reached, add parsley and season with salt, papper, cumin, cayenne and ground coriander.
