hummus

You know those recipes that you make again and again and you could even make them while sleeping?
This recipe is one of those. Most hummus recipes just don't have the right amount of lime or lemon juice, contain not enough tahin, there is no parsley in there or have the wrong texture. So I've started to make a hummus recipe after my taste.



Hummus:

200 g (7 ounces) cooked chickpeas/garbanzo beans
1 tablespoon olive oil
1 tablespoon tahin
2 tablespoons lime or lemon juice
1 or 2 garlic cloves depending on their size and how garlic-y you like it
3 tablespoons chopped fresh parsley
6 tablespoons water (or cooking liquid from chickpeas)
1 teaspoons salt
freshly ground pepper
1/4 teaspoon cumin, 1/4 teaspoon cayenne, 1/4 teaspoon ground coriander (all optional but good)

Chop the garlic and let it swim in olive oil. Put the chickpeas with water and lime/lemon juice into a blender and blend, then add tahin and the olive oil with garlic and blend again. When the desired texture is reached, add parsley and season with salt, papper, cumin, cayenne and ground coriander.

pizza bruschetta

2 weeks ago our football ("soccer" ;-) ) team had a party and we ordered pizza. I wondered what I could order, a vegetarian pizza without cheese? french fries instead of pizza? well it wasn't really hard, because my sister's boyfriend works at that Italian restaurant where we ordered so I asked him what I could order. His answer: pizza bruschetta. that was the best pizza I've ever had! and because I don't have the money to order it all the time I "copied" it, which wasn't really hard since my sister's boyfriend works there and knows the recipe :-) .



what you do is really easy, you bake a pizza crust without tomatosauce or vegetables on it, but you should brush it with olive oil. meanwhile you prepare the topping.

you need:

2 tomatoes
1 big garlic clove or 2 small ones
a lot of olive oil
some fresh basil leaves
some dried oregano
green or black olives
salt and pepper

Chop the garlic and let it swim in olive oil, because you want the oil to taste like garlic! Cut the tomatoes into very small dice, chop the basil and olives. When the olive oil smells like garlic throw everything together in a bowl and wait till the crust is ready. Let it cool and slightly cut it, pour the tomatoes on it and breake the pizza with your fingers into pieces. Yum!

banana-nougat-stollen


I love nougat and my mom has a recipe for a nougat stollen that is everything else than vegan, so I veganized it and added bananas to it because they pair lovely to the spices, nuts and the nougat. Tastes very good, though it's a bit dry, so I have to work on the recipe till it's perfect.

Spaghetti and more

When I don't know what to cook, I cook Spaghetti with Marinara Sauce. This one is a bit creamy, because I mixed leftover béchamel sauce with tomato sauce and added a lot of basil and instead of parmesan I put nutritional yeast on top.

And I finally baked the Apple-Peanut Butter-Caramel Bars from Veganomicon. But I didn't had Graham Cracker Crumbs neither Vanilla Cookies, so I made the Basic Single Pastry Crust and doubled the recipe (from Veganomicon too) and also substituted Brown Rice Syrup with sugar beet molasses (I don't really know what it's called in English)...
doesn't look so good, but tastes very good!

potatoes, tofu and vegetables

Voilà! That's what I had for lunch today: Mashed Potatoes, with "Tofu Bratecken" from "Tukan Tofu" and vegetables (carrots, peas, green beans and cauliflower) with béchamel sauce.

I'm back

Just a quick post about soup. The "roasted tomato soup" from "vegan lunch box" is so yummie. I really recommend this book, I've tried several recipes and they were very good. It has only one disadvantage: the time how long it takes to prepare a recipe isn't written down, as a busy person I really need that.
