banana-nougat-stollen


I love nougat and my mom has a recipe for a nougat stollen that is everything else than vegan, so I veganized it and added bananas to it because they pair lovely to the spices, nuts and the nougat. Tastes very good, though it's a bit dry, so I have to work on the recipe till it's perfect.

Spaghetti and more

When I don't know what to cook, I cook Spaghetti with Marinara Sauce. This one is a bit creamy, because I mixed leftover béchamel sauce with tomato sauce and added a lot of basil and instead of parmesan I put nutritional yeast on top.

And I finally baked the Apple-Peanut Butter-Caramel Bars from Veganomicon. But I didn't had Graham Cracker Crumbs neither Vanilla Cookies, so I made the Basic Single Pastry Crust and doubled the recipe (from Veganomicon too) and also substituted Brown Rice Syrup with sugar beet molasses (I don't really know what it's called in English)...
doesn't look so good, but tastes very good!

potatoes, tofu and vegetables

Voilà! That's what I had for lunch today: Mashed Potatoes, with "Tofu Bratecken" from "Tukan Tofu" and vegetables (carrots, peas, green beans and cauliflower) with béchamel sauce.

I'm back

Just a quick post about soup. The "roasted tomato soup" from "vegan lunch box" is so yummie. I really recommend this book, I've tried several recipes and they were very good. It has only one disadvantage: the time how long it takes to prepare a recipe isn't written down, as a busy person I really need that.

ice cream

what do you need if it's hot outside? right - ice cream! I've tested chocolate and raspberry from swedish glace. the only brand available here in the middle of nowhere 20 km away in the supermarket which has everything a vegan heart desires. pictured only the chocolate ice cream, but both are divine!

Baked potatoes with cashew cucumber dip

So easy and quick, if you prepare the dip the night before so you just have to put the potatoes in the oven and can relax (or learn latin vocabularies :-/ ). I love Veganomicon!

One post after another

I really hope that this will not be the last time that one post comes after another and I will post more often. At the moment I have so many ideas and I'm dreaming of publishing a cake book in German (maybe it works - we'll see, if I have enough time and ideas). So here is my cake: Portuguese cinnamon cake! It's so delicious with just the right amount of cinnamon and your kitchen will smell like it's Christmas time.

I promised a recipe

so here's the recipe to the previous post:

wheat free sesame apricot cookies:

1 3/4 cups oat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2/3 cups granulated sugar + 1/2 tablespoon molasses
1/4 cup oil
1 tablespoon ground flaxseeds
1/4 cup + 2 tablespoons soymilk
1 teaspoon vanilla
1/2 cup sesame seeds
1/4 cup tahini
1/2 cup dried apricots cut into small cubes

Preheat the oven to 375 °F
Sift together the oat flour, baking soda and salt. In another mixing bowl withk together the flaxseeds and soymilk. Stir together the sugar and molasses, add the oil, vanilla and tahini, whisk until everything is emulsified.
Mix the wet ingredients into the dry, fold in the sesame seeds and dried apricot cubes.
Drop the batter by the tablespoon onto an baking sheet with parchment paper, leaving about 1 1/2 inches of space between the cookies and bake for 10 to 12 minutes.
Remove from the oven and let cool for 5 minutes. Transfer to a cooling rack to cool the rest of the way.

cookies

I totally forgot to post these. They're wheatfree sesame apricot cookies with a lemon icing and some dried and cut into small cubes apricots on some cookies. It's adapted from veganomicon's wheat free chocolate chip cookies. If I have time I'll post it. Maybe this weekend or so, because I don't have school on thursday and friday. Of course I have other stuff to post, too, but I'm very busy at the moment (writing class tests, playing soccer matches, learning for driving school and so on).

I wanted to post...

...but I hadn't got time and the usb cable for my camera was away. And it was my birthday but I hadn't got the time to celebrate or to bake a cake (only for my classmates). There's also no photo of the cake for my classmates, because they ate it so quickly :-D. Ok enough, here the photos:

my birthday present from my brother and sisters... so many vegan sweets, I couldn't decide which one I have to eat first.

simple and quick, that's what I wanted after a busy day. So I came up with this italian spiced tomato bulgur and beans (I know, it doesn't really match together).

I had some leftover cooked buckwheat, so I made a salad. Don't know what I threw into it.

And last but not least, the lemony roasted potatoes from veganomicon. I ate them with cauliflower, because I was lazy.

cookies and "fast" food

When I was young... haha most of you would say I'm still young... I couldn't eat fast food. I was one of those kids who went to McDonalds only one time in the year and the only thing I could eat there were the french fries and eventually the chicken mc nuggets. I just didn't like much the food there and so I don't miss the fast food. But today I wanted a burger, I don't know why but I just had to eat a burger. So I made a burger to my taste with homemade burgers (from a package haha ;-) ), tomatoes, cucumbers, lettuce and lots of mustard and ketchup... so good. The best "burger" I've ever had.

And of course I made cookies. My choice were the Wheat Free Chocolate Chip Cookies from Veganomicon and Happy Cookies from this French blog.

cupcakes and pasta

Yesterday I baked a lot, I made the lime/lemon scones again. Everybody likes them, my mother told me to double the recipe when I make it next time, because they're so good.
Then I gave the jelly donut cupcakes from veganomicon a try. But they were rather jelly-stuffed cupcakes, because the home-made jam I used was way too thick and sank to the bottom, as you can see in the picture.
And last but not least I tried the lower fat banana bread (no picture sorry) from veganomicon, too.

I also did a bit of cooking, though I could bake all day long. I made the Spicy Lemon Pasta with Broccoli from veganyumyum.com and I have to admit that this is now one of my favourite pasta recipes. I almost followed the recipe, the only change I made was that I added 1/2 teaspoon dried oregano and 1/2 teaspoon dried thyme at the end.

Pizzarolls, Dip, Scones, Gratin

Tomorrow starts my last week of school, which means no class tests until the holidays are over, but unfortunately that doesn't mean that I'm not busy.
Anyway, here are the things I ate lately :-) :

And here my first attempt to bake scones. I made the lemon/lime scones from but dit they EAT it? Though I overcooked the glaze so it was rather candy it tasted very good
And last but not least I tried the gratin dauphinois posted in the forum on peta.de again with a different kind of potato and it worked out fine, if someone wants the recipe, leave me a comment and I'll type it up here.

Korvapuustit and pelmeni

Korvapuustit are Finnish cinnamon rolls, I found the recipe in the Internet and veganized it. Really yummy. If someone wants the recipe leave a comment, when I have time I'll type it up (I have two class tests this week, Latin and maths :-/ so there's a lot of work).

the little Russian girl in me required pelmeni... the other parts of me wanted peas and a cheese-y sauce. So I made both. The pelmeni were stuffed with potatoes, carrots and spinach a strange, but delicious combination.

banana chocolate blondies, cake, clafoutis aux framboises

I tried out the banana chocolate blondies by Carla and they were so good, though I usually don't like bananas in baked goods. I made some changes about the recipe (I had no soy yoghurt) but it worked really good and the dough was perfect and the combination of bananas, cinnamon and chocolate chips, too! (in contrast to my crappy picture)

At our school we have the "tradition" to bring a cake to the "Tutorenstunde". "Tutorenstunde" is the lesson we have with the teacher of our first major subject called "Tutor" (my first major subject is French, the second English). Every wednesday we have this lesson where we discuss things like going to a trip (this June to Paris), which book we will read next or things about the "Abitur" (A-levels) or stuff like that. And to have something like a cosy atmosphere each lesson a student has to bring along a cake. This week was my turn and I made a lemon cake with icing and sugar streusel. As you can barely see at the picture I coloured the dough in different colours (blue, yellow, green and red), I wasn't able to make an inside shot. I love making cakes for my classmates, because they are always surprised ("How did you do that, I mean baking without eggs?"). My last cake was a mulled wine cake, the recipe is only in my German blog, but if anyone is interested and doesn't understand German ask me, and I'll translate it. So here's the picture of my lemon cake

And last but not least, my clafoutis aux framboises recipe I made up today. The original recipe is from my mother, but I made so many changes, that it's something totally different. I wanted it to be glutenfree and low in fat.
The recipe:

Clafoutis aux framboises:
1 level tablespoons potato starch (any other kind will work too I think)
1 tablespoon cocoa
125 ml soy milk (or any other non dairy milk)
60 g sugar
1 tablespoon vanilla sugar
a pinch of salt
40 g ground hazelnuts
1 teaspoon baking powder
100 g (fresh or frozen) raspberries
Spray a baking dish with non stick spray (or use margarine as I did) and distribute the raspberries in the dish. Mix the dry ingredients, add the soy milk and pour it quickly over the raspberries. Preheat the oven to about 329° F and bake it for about 50 minutes (I can't tell when my brother took it out of the oven, but I think 50 minutes might be OK)

Something from eastern europe

This is a dish from eastern europe, we call this "Plow" and it's really simple to make. The original recipe from my mother is with chicken , but I used TVP instead of chicken. You just sauté a chopped onion and a carrot cut into small pieces, add the TVP and then rice and water and let it cook till the rice has soaked up the water and add some spices.

Clafoutis aux Cerises

At the moment I'm trying to veganize a recipe for "clafoutis aux cerises". I found a recipe in the Internet, but it calls for "crème de riz" which you can make at home, but I'm to lazy to make it when I only need three tablespoons of it. So I veganize a recipe from my mum. OK it's not a traditional "clafoutis aux cerises", because I want it in small so you can eat it with your hands and don't need a table fork. I want it low fat and glutenfree. They tasted good, but I have to work on the amount of starch and the right baking temperature. And they shouldn't to look so ugly...

This is something we made in the project week: Croustades aux champignons, was OK, not yummie, but OK. Just some home made crust with bechamelsauce, cooked mushrooms and chives. Nothing special, recipe will come a day, though I don't want to post it, because I don't really like it.

What I found in my Mail today...

... was a box from Line. And guess what she sent me! Two jars of tahini! I was searching for tahini, but living in the middle of nowhere I wasn't able to find it anywhere. So she was so nice and sent me two jars of organic tahini! Thank you very much :-)

This and that *blahblahblah*

This week we have a project week at our school, that means that every major subject course has to find a topic for a project and the students work one week on this topic on their own, the teacher just looks after them so they aren't able to play cards ;-) . I'm learning French as a first major subject and we have decided to work on French cuisine of course there will be some vegan food for me, so I can eat something, too. On Thursday I'll get my report card, that means that half of the school year is done... I can't believe how time flies! The advantage is, that I have more time for cooking and baking which I'll definitely use. Perhaps it will be something inspired by France. I hope that I'll find time to try something out this evening after driving school.

Smoothie and Gratin

Today we went to the supermarket and buyed some food. For example mangos which I used for a smoothie. I blended the mango and then I added banana, some cherries, a little bit of coconut milk, soymilk and some lemon juice. Yummy...
For lunch I had potato gratin from peta2.de it was delicious, but there was something wrong with the sauce...
